Skillet Country Fried Chicken
Instead of deep-frying chicken in a vat of oil, pan frying creates delightfully crunchy and
moist fried chicken. The flavors in this batter are spicy, familiar, and downright home.
Serves 4 to 6
• 4 chicken thighs
• 4 chicken drumsticks
• 1-1/4 cups flour
• 2 teaspoons baking powder
• 2 teaspoons cayenne pepper
• 2 teaspoons onion powder
• 2 teaspoons garlic powder
• 2 teaspoons paprika
• 2 teaspoons salt
• 1 teaspoon freshly ground black pepper
• 1-1/2 cups water
• 1 egg
• 1 tablespoon vegetable oil
• 3 cups vegetable oil, for frying
Brine
• 4 cups water
• 1/4 cup (packed) dark brown sugar
• 3 tablespoons Worcestershire sauce
• 1 tablespoon ancho
chili powder
• Salt and pepper
Prepare and Brine Chicken
1. Add brine ingredients to a large sealable container. Add the chicken, making sure all
pieces are completely submerged. If needed, place a heavy plate over the chicken to
keep it from rising to the top of the brine water. Seal tightly.
2. Refrigerate for at least 3 hours to overnight. Remove the chicken from the brine
and pat dry.
