The classic Cloer waffle recipe
Ingredients:
• 6 eggs
• lemon flavouring
• rum flavouring
• 1 envelope baking powder
• 1 envelope vanilla sugar
• 200 g sugar
• 200 g butter or margarine
• 500 g flour
• 125 ml mineral water (carbonated)
Preparation:
Combine flour, baking powder, sugar and vanilla
sugar, melt butter or margarine and add to other
ingredients. Add mineral water, lemon and rum
flavouring and mix well. Beat eggs in a separate
container until frothy and fold into dough. Allow
the dough to stand 1 hour or longer. The dough
should drip from the spoon. If this is not the case,
add some more water.
Apple Waffles
Ingredients:
• 200 g margarine or butter
• 100 g sugar
• 4 eggs
• Grated peel of a raw lemon
• 250 g flour
• 1 packet of backing powder
• 100 g flaked or chopped almonds
• 1/8 l mineral water
• 2 - 4 finely chopped apples
Preparation:
Cut the apples into small cubes. Mix the ingredients
for the dough and stir until smooth. Finally, add the
apples and fold in to the dough.
Note:
These waffles are ideal for freezing and reheating.
They are similar in taste to apple strudel.
Brussels Waffles
Ingredients:
• 2 eggs
• 250 g flour
• 25 g granulated sugar
• 250 ml lukewarm milk
• 250 ml lukewarm water
• 12 g yeast
• 100 g butter
• 1 pinch of salt
• Margarine for the waffle iron
Preparation:
Melt the butter and leave to cool. Mix together the
water and eggs and slowly add the flour, sugar and
salt. Mix the milk with the yeast and mix into the
dough until a smooth dough is created. Then add
the butter to the dough and mix everything toge-
ther thoroughly. Leave the dough to rest in a warm
place for 30 minutes. Now pre-heat the waffle iron
and grease with a little margarine before baking
each waffle. Add approximately 4 dessert spoon-
ful’s of dough to the iron for each Brussels waffle
and bake for 3 -4 minutes.
Pizza Waffles
Ingredients:
• 125 g butter or margarine
• 4 eggs
• 125 g flour
• ½ tsp baking powder
• 125 ml lukewarm water
• approx. 100 g cooked ham cut in strips
• 2 apples finely diced
• 1 packet walnuts or hazelnuts finely ground
• 2-3 TBSP tomato paste
• 1-2 tsp mustard
• salt, pepper and pizza spices
Preparation:
Beat butter until creamy and add eggs one at a time.
Alternately mix in the flour mixture and the luke-
warm water. Add ham, apples, nuts and spices (to-
mato paste, salt, pepper, mustard, pizza spices). Bake
dough immediately. Variations: mushrooms, cheese,
olives or cucumbers.
Hearty Potato Waffles
Ingredients:
• 500 g mealy potatoes
• 4 eggs
• 2 onions
• 100 g flour
• 1 dessert spoonful soured cream
• Salt to taste (approx. 1 heaped desert spoonful)
• Pepper to taste (approx. 1 heaped teaspoonful)
• 3 dessert spoonful’s fresh or frozen herbs
Preparation:
Grind potatoes and onions with a fine grater. Add
the rest of the ingredients and mix together. Grease
the waffle iron with a little rapeseed oil and bake the
dough immediately.
Note:
The potato waffles go very well with a herb quark
or apple purée.
