ROASTEd REd CAPSICUM, SPINACH

ANd BROCCOLI dIP

Function: GRILL ANd BAKE
Temperature: HI and 175˚C (350˚F)
Cooking Time: 40 minutes
yield: 4 cups

INGREdIENTS

1 red capsicum
¼ cup (65ml) cooked spinach, excess
water removed, finely chopped
1 cup cooked bite-sized broccoli florets,

finely chopped
1 garlic clove, crushed
¼ cup freshly grated Parmesan cheese
¾ cup mayonnaise
¾ cup shredded mozzarella

METHOd

Roasting the Red Capsicum

Slice red capsicum in 4 pieces. Remove

seeds and stem. Flatten each piece and

place skin side up onto Breville enamel

baking pan.

Set wire rack in top rack height position.

Turn FUNCTION dial to GRILL, set

TEMPERATURE to HI and set TIMER

to 12 minutes. Press START/CANCEL

button to activate. Grill capsicum until

skin is blackened.

Remove capsicum from oven. As it cools,

skin will loosen from flesh. When cool

enough to handle, peel away the skin.

Chop capsicum in small dices.

The dip

In a medium sized bowl, fold together all

the ingredients.

Turn dip into a 4-cup (1 litre) capacity

baking dish, or divide dip into two 2-cup

(500ml) baking dishes.

Position wire rack to bottom rack height

position. Turn FUNCTION dial to

BAKE. Set TEMPERATURE to 175˚C

(350˚F) and TIME to 25 minutes.

Press START/CANCEL button to

activate. Bake dip until it bubbles and is

completed heated through.

TIP

Serve dip with Pita Chips. The recipe
