Posh fish
200g salmon fillet
200g smoked haddock
200g cod
4 king prawns
85g plain flour
1 tbsp cornflour
1/2tsp salt
200ml ice cold sparkling water

Preheat the deep fat fryer to 160°C.

Cut the fish into equal size 'fingers'.

In a bowl, mix together the flour, cornflour and salt then add the water
whisking quickly.

Remove the lid from the deep fat fryer and lower the basket into the oil.
5.
Dip the fish into the tempura batter and coat. Then using metal tongs, place
the fish into the hot oil. Remember not to overfill the deep fat fryer.
6.
Cook fish for 5-7 minutes. Once golden and crispy, lift the basket out and
rest on the rest position to drain.
Sweet potato chips
2 large sweet potatoes
Salt

Preheat the deep fat fryer at 180°C.
2.
Peel the sweet potatoes and cut into thick chunks.
