PRE- TREATMENT OF FOOD – RECOMMENDATIONS

F ruit s
Wash food prope r ly and dry t hem.
Remove any pips and blemishes.
Cut into slice s or dry whole small fruit s.
To prevent browning, sprinkle t hem with lemon or pineapple juice.

V egetables
Wash food prope r ly and dry t hem.
Remove any pips and blemishes.
Vegetables with a long cooking time must be steamed for 5 minutes or boil ed in hot water
for 1 - 2 minutes .
Parboiled vegetables dry with a paper towel.
Cut into slices.

Mushrooms
Clean them thoroughly of the sand without using wa ter.
Bigger pieces cut into slices.

Herbs
Rinse under water and dry with a paper towel.
Dry freshly picked herbs.
Dry one kind of herbs at one time .

M eat
Remove excess fat and membranes from the meat .
Cut into thin slices.
Marinate the meat for about 10 hours, then dry it with a paper towel .
