BLACK-‐EYED PEAS
Ingredients
4 slices bacon
1 medium onion
1 (16-‐ounce) package dried black-‐eyed peas, washed
1 (12-‐ounce) can diced tomatoes and green chilies
1 teaspoon salt
1 teaspoon chili powder
1/2 teaspoon black pepper, freshly ground
6 cups water
1/3-‐pound hog jowl, thinly sliced
3 teaspoons Paula Deen's House Seasoning*
3 tablespoons buEer
PreparaLon
1. Heat roaster to 300°F degrees, add oil.
2. Add bacon, cook unAl crisp, about 5 minutes. Remove the
bacon, crumble, and set aside to use as a topping for the
peas.
3. Add onion and sauté in the bacon drippings unAl tender.
4. Add the peas, diced tomatoes and green chilies, salt, chili
powder, pepper and water.
5. Cover and cook over medium heat for 45 minutes to 1 hour,
or unAl the peas are tender.
6. Add addiAonal water, if necessary.
7. Serve garnished with crumbled bacon.
