In all other cases, combination reheating does not use the pizza pan, the oven must be preheated to the stated temperature with the metal tray placed
on the glass tray.

Standing Time
: it
is imperative that the food is allowed to rest after reheating: 3 to 6 mins. for entreés, bread, pastries, liquids and plated meals and 10 mins for gratins
and tarts.
