TO BE OBSERVED BEFORE USE
The Smoking Oven is designed for outdoor use only. Read the instructions. Always use a socket with
fault current protection (max 30 mA) with the Smoking Oven.
This Smoking Oven may be used by children no less than eight years of age or persons with reduced
physical, sensory or mental qualities or who lack experience or knowledge IF they are supervised or
have been taught to use the Smoking Oven safely and if they are aware of the risks connected with
using the Smoking Oven. Do not let children play with the Smoking Oven. Do not let children clean
or service the Smoking Oven without supervision. Do not heat the Smoking Oven with coals or other
combustible fuels.
USE OF THE SMOKING OVEN
The Smoking Oven is an electrical appliance in which a heat resistor generates heat for cooking. By using smoking chips, you
can add smoky flavours to your food. The heat resistor heats the smoking chips so that they start to produce smoke in the Smo-
king Oven. During use, a small amount of smoke will come out of the Smoking Oven. This is worth considering when selecting
a place for smoking.
The temperature in the Smoking Oven is adjusted by adjusting the power. The Smoking Oven’s power control unit adjusts the
resistor’s power steplessly between 0 and 3, so the regulator can be set to 0, 1, 2 or 3.
Excess moisture and pressure caused by smoking go out through the ventilation valve in the back part of the Smoking Oven.
The valve flap should be kept down during use.
FACTORS AFFECTING THE TEMPERATURE
The surrounding air temperature
The Smoking Oven has no thermal insulation, so the temperature of the surrounding air affects the temperature in the Smoking
Oven. Windy weather may cool the Smoking Oven to some extent.
The temperature of the food to be smoked
The temperature of the food placed in the Smoking Oven lowers the temperature in the Smoking Oven and absorbs heat during
the entire smoking process. With the thermometer inside the Smoking Oven you can watch the temperature in the Smoking
Oven. However, you’ll get the best results by having a separate meat thermometer in the food you are smoking.
Opening the lid during smoking
Opening the lid while you are smoking will lower the temperature in the Smoking Oven by a few degrees. It’s a good idea to
consider this while smoking and to avoid opening the lid unnecessarily. However, opening the lid to check if the food is done
will not significantly affect the result.
USING THE MUURIKKA ELECTRIC SMOKING OVEN PRO
Preparations for smoking
Wash the fat plate and the grating, these parts are machine washable. Dry the parts. Place a piece of aluminium foil on the fat
plate to make it easier to clean the fat plate after smoking. Sprinkle the chip tray with a thin layer (no more than 2 dl) of clean,
coarse smoking chips. You may soak the chips before sprinkling or moisten the chips when they are on the chip tray. You may
also place a few lumps of sugar on the chips to add some colour to the food to be smoked. Before you start smoking, place the
Smoking Oven on the ground or a solid, incombustible base. Select a fireproof smoking place where sparks cannot start a fire.
Heating and adding smoking chips
Heat up the Smoking Oven while still empty to the desired temperature with the 3-position. We recommend that you set the
temperature about 20 degrees higher than the final target temperature, as the temperature in the Smoking Oven will quickly go
down several degrees when you open the lid and put cold food into the Smoking Oven. When the Smoking Oven is sufficiently
warm, place the food to be smoked in the Smoking Oven. Place the chip tray with chips on it on the carriers above the resistor
(do not place the chip tray directly on the resistors). The smoking chips may also be added later depending on the desired
strength of the smoky flavour and the final smoking time. After adding smoking chips, it will take a few minutes for smoke to
come out.
Maintaining the temperature and smoking
After adding the chips and the food to be smoked, the temperature is maintained by watching the thermometer in the Smoking
Oven and using the knob to decrease or increase the power, depending on the temperature in the Smoking Oven. Depending
on the amount of smoking chips, smoke will come out during the entire smoking process. If necessary, add smoking chips to
replace those that have burnt away.
Quick increase or decrease of temperature
The fastest way to adjust temperature is to turn the power to either position 3 or 1. With position 3, the resistor works with
full power and heats up the Smoking Oven quickly. With position 0, the resistor is completely off and the temperature in the
Smoking Oven goes down quickly. It will go down more quickly if you open the lid for a while.
Smoking at low temperature (75 - 110 °C)
If you want the temperature in the Smoking Oven not to exceed 100 °C too much or even to remain below 100 °C, first heat up
the Smoking Oven with position 3 to the desired temperature. This will make the chips smoke. When the desired temperature
has been reached, the Smoking Oven will maintain the temperature with position 1. With this position, there will be very little
smoke.
