2 tbsp. unsalted butter
2 firm ripe large bananas, cut diagonally into ¼ in. thick slices
1 ¼ cups pure maple syrup
Put oven rack in middle position and put a large metal cooling rack directly on it. Preheat oven to 250°F and preheat waffle
maker. Whisk together the flour, sugar, baking powder, baking soda, and salt in a large bowl. Whisk together the buttermilk,
melted butter, and eggs in another bowl and then combine both mixtures just until moist. There should be lumps. Brush the
preheated waffle maker grids with vegetable oil or spray them with a non-stick cooking spray. Pour approximately ½ cup of
batter onto the bottom grid. Close lid and bake until desired color. Transfer the waffles to the rack in the oven to keep warm.
While the last batch is baking, heat butter in a 12” heavy skillet over moderately high heat until butter is melted. Add banana
slices in a single layer and cook until golden, about 1 minute per side. Remove from heat and add syrup to the skillet. Spoon
bananas over the waffles and drizzle with the warm syrup before serving.
