When the cooker has reached the target cooking temperature for Step 1,

Note:
Use a thermometer to ensure that the milk has reached the pasteurization
temperature of 161°F / 72°C.
Step 2 – Add Starter Culture
1.
Remove the inner pot from the cooker and allow the milk to cool.
2.
Add starter culture to the milk in accordance with the instructions
included with starter culture product.
Note:
Plain yogurt with active cultures can also be used as a starter. Follow a
trusted Instant Pot yogurt recipe when using yogurt as a starter culture.
3.
Place the inner pot in the cooker.
4.
Lock the cooker lid in place.
5.
Press the Quick Release Button down to ensure that the Steam Release
Valve is open.
