All food should be fresh before freezing or refrigeration, as food can
be preserved but cannot be rejuvenated.
●
When freezing meats it should be remembered that bigger pieces
keep better. So mincing and cutting into small pieces in advance should
be avoided.
●
All frozen food should be either packed in containers or wrapped in
polythene or aluminium foil.
●
Ice cream should be kept on the floor of the freezer. Ice cream may
still stay soft. Ice cream remains hard at low temperatures in deep
freezers.
●
Milk should be stored in the refrigerator after being boiled and cooled
to an ambient temperature. Milk packets should be kept in the chiller
zone.
●
Vegetables can be kept fresh for a longer period of time if the
moisture content in them is retained. Loosely wrap all vegetables,
especially the leafy ones in polythene bags. The roots of green leafy
vegetables can be cut before storing.
●
Fruit and vegetables that have a strong odour should be wrapped
tightly in polythene bags. Ripe fruits should not be placed with
vegetables as they release a gas that turns certain vegetables like
lettuce brown.
●
If fruits and vegetables are washed before storing, they should be
thoroughly drained of all the water. Too much moisture can increase
the possibility of spoilage or decay.
