Tilapia and Green Beans with Almonds
1 lb. fresh green beans
½ cup panko bread crumbs
2 cloves garlic, chopped
¼ cup Parmesan cheese, shredded
¼ cup slivered almonds
1 Tbsp. parsley, chopped
1 Tbsp. olive oil
1 egg, beaten
salt & pepper
1 lb. tilapia fillets
½ cup flour
1 lemon, cut into wedges
1. Mix beans, garlic and almonds together on the bake/drip pan. Toss with
the olive oil and salt & pepper, to taste.
2. Cook on short rack at 425° F for 5–10 minutes, tossing once.
3. Add the tall rack over the beans.
4. In a medium bowl, mix flour, bread crumbs, Parmesan, parsley, salt &
pepper to taste.
5. Beat the egg in a shallow bowl.
6. Dip fillets into egg, then roll in bread crumb mixture. Coat well.
7. Spray the perforated pan with cooking spray and place fillets on it. Cook
on the tall rack at 350° F for 10 minutes. Turn the fillets and cook another
10 minutes at 350
o
F.
8. Serve with lemon.
