BURGUNDY LAMB SHANKS
INGREDIENTS
2kg lamb shanks
Salt & Pepper, to taste
Grated zest of ½ lemon
½ tsp dried oregano
2 cloves garlic, minced
¼ cup fresh parsley,
chopped
1 carrot, peeled and
chopped
1 onion, chopped
1 tsp olive oil
1 cup dry red wine
1 beef stock cube,
crumbled
Serves 4
1. Season shanks with salt, pepper
, lemon zest and
oregano. Place in the slow cooker and sprinkle with
garlic and parsley.
2. In a heavy-based frying pan, sauté carrot and onion
in oil and transfer to slow cooker. Pour wine into frying
pan and add stock cube. Deglaze frying pan and stir
juices into slow cooker.
3. Cover and cook on Low for 8 hours. If you wish to
have a thicker sauce, drain cooking liquid into a
saucepan and boil to reduce and thicken slightly.
