Turn the knob (33) clockwise (Fig. 9).
Close it completely by turning the knob
(33) between 1½ and 2 turns, until the clamp
bar (35) remains fixed under the clamp
hooks (37) and the lid (1) is fully closed.

Place the pot centrally on the heat
source. If you are using a gas or
electric hob, choose the ring that best fits
the diameter of your pot.
Remember that you can perform all the
steps you need to before you close the
pot: light frying, sautéing, browning, stir-
frying, etc. Then, once you have added the
cooking liquid and closed the pot, follow
the steps below:
1.
Fit the rotary valve (22) on the chimney
(23) (Fig. 10).
2. Turn the heat source up to its
maximum power. If using a gas
cooker, adjust the flame to prevent
it spreading beyond the pot base.
This will save energy and prevent
deterioration of the side handles (9)
and silicone sealing ring (8).
3. After a while, the pressure built up
inside the pot will start to turn the
rotary valve (22) and steam will start
to be ejected. If you notice a small
steam leak between the lid (1) and the
body (11), turn the knob (33) clockwise
a further half turn until the lid (1) is
completely closed and steam only
escapes through the rotary valve (22).
When the rotary valve (22) starts to
rotate ejecting steam, the intensity of
the heat source needs to be reduced to
maintain a constant but slight release
of steam. Cooking times will need to be
counted from this moment. It is normal
to see small amounts of steam coming
out of safety valve (7) during cooking.
If the pressure drops and the rotary
valve (22) stops turning, increase the
heat source intensity until a moderate,
constant steam flow is reached once
more, generating movement of the
rotary valve (22) again.
Note the following:
• Never shake the pressure cooker while
it is cooking.
• If you notice any problems during
cooking, take the pot off the heat
source and let it cool down completely.
• To prevent damage to your pressure
cooker, cook with at least the
minimum amount of water or liquid
recommended. Never leave the pot on
the heat source without liquid.
• Never try to open it with pressure inside.
• Never use this pressure cooker to fry
with pressurised oil.
