Perfect Mini Egg Pods
The pancake maker makes great mini egg pods perfect every time:
Ingredients:
2 or more eggs.
Salt and pepper to taste
dash of milk
Preparation:
1. Crack two eggs into a small prep bowl or glass. Mix in the milk.
Season with salt and pepper.
2. Preheat your pancake maker until the indicator light turns green,
approximately three minutes.
3. Pour approximately

tablespoon of batter in each circle, close
and lock the lid.
4. Bake for about 1 minute or until firm.
Note: Add your favorite cheese or vegetables.
Chocolate Chip Pancakes
Ingredients:

cups all-purpose flour
3 tablespoons sugar

cup cocoa powder, approximately
1 teaspoon baking powder
1 teaspoon salt

teaspoon baking soda
3 whole eggs, beaten
2 ounces unsalted butter, melted and slightly cooled
1 teaspoon pure vanilla extract
16 ounces buttermilk, room temperature

cup mini chocolate chips
Preparation:
1. In a medium bowl, whisk together the flour, sugar, cocoa powder,
baking powder, salt, and baking soda.
2. In another bowl beat together the eggs and melted butter and
vanilla, and then add the buttermilk.
3. Add the wet ingredients to the dry and stir in the chocolate chips
just until combined. Allow to rest for 5 minutes.
4. Pre-heat your pancake maker until the Green light comes on.
5. Pour approximately
