For the cake:
1¼ cups fine sugar
2 tbsp cornstarch
6 large egg whites at room temperature
½ tsp cream of tartar
¼ tsp salt
½ tsp pure vanilla extract
1 tsp white distilled vinegar
For the whipped cream & toppings:
1 cup heavy cream
2 tbsp sugar
½ tsp pure vanilla extract
Your choice of sweet & tart fruits
Ingredients:

Preheat your oven to 250°F. Draw an 8-inch circle on a parchment paper and place
it ink-side down on a baking sheet.

In a bowl, make the batter by whisking together the sugar and cornstarch.
Set aside.

In a large mixing bowl, use your Turbo Hand Mixer with the whisk attachment to
beat the egg whites until foamy. Stir in cream of tartar and salt and continue to beat
on a medium speed. Slowly add sugar and cornstarch mixture one tablespoon at
a time while the mixer is still running. Continue to beat the egg whites until hard
peaks form. The mixture will look smooth and shiny. Add vanilla extract and vinegar,
then gently fold the mixture with a spatula.
