DIRECTIONS:
Roast beets, onion, and garlic in an oven preheated to 375ºF until beets
are tender (60-90 minutes depending on the size of beets).
Place all the ingredients for the soup in the blender and use the Tamper
to push the ingredients into the bottom of the blender. Blend on the
“Soup” setting until smooth.
Serve with a dollop of coconut cream and herbs of your choice.
1 lb. golden beets
1 apple, cored
1 small onion
2 garlic cloves
1 cup water
½ tsp sea salt
ground pepper
coconut cream, for garnish
cilantro, for garnish
