   • Use las hierbas y especies en hoja entera para obtener mejor sabor en el

      cocimiento de “todo el día”. si se usan hierbas y especies molidas, deben

   • Por no haber calor directo al fondo, siempre debe llenarse la olla de gres

      por lo menos hasta la mitad para adaptarse al tiempo recomendado. Se

      pueden preparar pequeñas cantidades pero se afectará el tiempo de

      cocimiento.

   • Un líquido específicamente requerido puede sustituirse siempre que se use

      una cantidad igual. (Tal como sustituir una lata de sopa de 300 g más 110

      g de agua por una lata de tomates de 410 g ó 1/2 taza de caldo de pollo o

      de carne vacuna por 1/2 taza de vino).

   • Los frijoles deben estar totalmente blandos antes de combinarlos con el

      azucar y/o aliementos ácidos. (

Eso puede deberse a las variaciones de voltaje tan comunes en todas partes.

     O a la altitud. O incluso a la humedad extrema. Las ligeras fluctuaciones

     en la corriente eléctrica, que ocurren en todas partes, no tienen un efecto

     apreciable en la mayoría de los artefactos electrodomésticos; sin embargo,

     pueden alterar ligeramente el tiempo de cocción. Deje bastante tiempo para

     cocinar, y recuerde, es prácticamente imposible recocer la comida. Aprenderá

     con el tiempo a decidir si debe aumentar o reducir el tiempo de cocimiento.

POT ROAST OF BEEF

2 to 3 potatoes, sliced

Salt and pepper to taste

2 to 3 carrots, sliced

2 puond beef roast

1 to 2 onion, sliced

1/2 cup beef broth

Put vegetables in bottom of stoneware. Salt and pepper meat to taste, put in

pot. Add liquid. Cover; cook on LOW 10 to 12 hours. (HIGH: 5 to 6 hours.)

Remove meat and vegetables with spatula and thicken for gravy if desired (see

“HIINTS” page 4). Without Vegetables: Season roast with salt and pepper and

any other favorite seasonings. Add no liquid. Cook as directed.

HEARTY BEEF STEW

1 1/2 to 2 pounds stew beef,

1 can (28-oz.) tomatoes

  cut in 1-inch cubes

2 to 3 stalks celery, sliced

4 to 5 carrots, sliced

1/4 cup quick-cooking tapioca

1 small onion, diced

1 whole clove (optional)

salt and papper to taste

2 bay leaves

Trim all fat from meat. Put all ingredients in stoneware and mix. Cover and cook

on LOW 8 to 10 hours. (HIGH: 4 to 5 hours).

1 medium onion, thinly sliced

3-lb. chicken, cut up
