rice and zucchini pancakes
(STraigHT edge Blade)
Serves 6
200 g Zucchini
100 g raisins (soaked)
100 g pine nuts
100 g sugar
100 g icing sugar
50 g rice
100 g flour 00
20 g yeast
0,150 lt milk
1 egg
10 g vanilla extract
frying oil as required
Peel and cut the zucchini into rounds using the straight edge blade supplied; blanch in
boiling water for 2 minutes; drain and leave to cool. Cook the rice in the same water. Drain the
rice and leave to cool. Prepare a mixture with all the ingredients including zucchini (except
icing sugar). Heat the oil and with the help of a spoon, fry the mixture in flakes. Once fried,
drain on paper towel. Sprinkle with powdered sugar and serve hot.
