Cleaning
WARNING!!
Always disconnect the power supply be-
fore cleaning or servicing the oven.
WARNING!!
If the oven needs to be moved, the gas
must be turned off and disconnected from
the unit before removing the restraint. Re-
connect the restraint after the oven has
been returned to its original location.
Follow this recommended cleaning schedule for
proper oven performance.
Daily:
1. Clean the conveyor belt using a wire brush. Al-
low any foreign material to drop into the crumb
pans.
2. Remove the product stop and both crumb
pans from the ends of the conveyor.
3. Empty and clean the crumb pans with a hot
water/detergent mix. Rinse with clean water.
Every Three Months:
1. Unplug the 220V power cord.
2. Disconnect the gas. Be sure that the oven
control cables have 2-3 feet of slack
3. Clean the cooling fan louvers on both sides of
the oven with a soft brush.
Every Six Months:
1. Remove the product stop and both crumb
pans from the ends of the conveyor.
2. Remove both upper end plugs. Loosen the
wing nuts on the bottom of each end plug.

3. Remove the air plates as follows:
a.) Loosen the wing screws holding the air
plate retainers in place. Remove the four
wing screws from the control box end of
the oven.

b.) Slide the air plates straight out from both
ends of the oven.
