For ∆t cooking, the temperature in the cooking chamber is based on the
temperature measured by the core temperature probe. Setting a ∆t value equal to
100°F for example, the temperature in the chamber will be maintained constantly
100°F above what is detected at the core of the product. Cooking will stop when
temperature of the product being cooked, measured by the core probe, reaches
the set value. Set both the ∆t and core probe temperature by selecting the icon
and turning the Master Knob until the desired temperature is reached. Confirm by
pressing Master Knob or the display.

Add Moisture (Convection Mode Only)
In a cooking mode it is possible to manually inject humidity into the cooking
chamber using the Humidifier function. This is accomplished by keeping the add
moisture key pressed for as long as moisture is desired in the cooking chamber.
