Put prepared fresh fish (e.g. trout, haddock, codfish) in a suitable sized ovenproof
glassware with lid. Add liquid until bottom of dish is covered e.g. 3-4 tbsp. lemon
juice, white wine or water and cover with lid. Put dish on wire rack. If you prefer
roasted appearance, brush skin of fish with olive oil and do not cover.
