Hidden Vegetable Pasta Sauce
2 carrots, diced
2 sticks of celery, diced
5 mushrooms, sliced
1 red onion, chopped
2 red peppers, diced
1 clove of garlic, chopped finely
2 cans of chopped tomatoes
1 tbsp. olive oil
Attachment: Liquidiser

Heat the olive oil in a large saucepan. Add onion, carrot and celery. Cook on
a low/medium heat for approx. 20 mins until soft.

Add peppers, mushrooms and garlic and cook for a further 7 minutes.

Tip in the tomatoes and simmer for 15mins on a low heat.
4.
Allow to cool then pour sauce into the liquidiser and blend until sauce is at
the required consistency.
The sauce can be frozen until required or served stirred into pasta.
