Southern Fried Chicken
Serves 4
8 chicken thighs or drumsticks
Marinade
300ml natural yogurt
100ml milk
2 Shallots, finely chopped
2 garlic cloves, finely chopped
Southern Coating
90g plain flour
½ tsp salt
½ tsp black pepper
½ tsp cayenne
½ tsp paprika
½ tsp thyme

Mix all of the ingredients for the marinade in a shallow oven dish. Place the
chicken in the marinade and coat the chicken thoroughly. Cover the dish
with cling film and allow to marinade for 4-6 hours in a refrigerator.

Mix together the ingredients for the coating on a deep plate. Remove the
chicken from the refrigerator and cover in the coating. Leave the chicken
covered, on a plate to rise in temperature for 30 minutes before cooking.

Preheat the oil to 180°C. Lower the basket into the oil then place the chicken
into the oil using metal tongs. Cook until golden and crispy.

Preheat the oven to 190°C.

Remove the basket from the deep fat fryer and place in rest position. Allow
the chicken to drain.

Transfer the chicken onto a baking tray and place into the oven. Cook for 18-
20 minutes until cooked through.
