HONEY GARLIC CHICKEN

1 whole chicken, cut in half lengthwise
•
½ tsp (2 mL) pepper
•
¼ cup (60 mL) all purpose flour
•
2 tsp (10 mL) vegetable oil
•
6 cloves of garlic, minced
•
2 tsp (10 mL) ginger, minced
•
¾ cup (175 mL) sodium reduced soy sauce
•
½ cup (125 mL) honey
•
½ cup (125 mL) brown sugar
•
½ cup (125 mL) fat free chicken broth
•
¼ cup (60 mL) rice wine vinegar
•
2 tsp (10 mL) cornstarch
•
2 tbsp (30 mL) cold water

Season chicken with pepper and dredge in flour. Heat oil in large
skillet over medium-high heat. Sear chicken halves on both sides; place
into slow cooker.

In a bowl whisk together garlic, ginger, soy sauce, honey, brown
sugar, chicken broth and vinegar, until brown sugar dissolves. Pour over
chicken.

Press button on slow cooker to LOW setting and cook covered for 5
hours, or until chicken is fully cooked.
