Lamb Burgers

Makes 4 servings
INGREDIENTS
1 1/2 pounds lamb roast
6 whole garlic cloves
12 Kalamata olives, pitted
Kosher salt and fresh pepper to taste
1 tablespoon olive oil
Buns and condiments of your choice, for serving
METHOD

Cut lamb into 1-inch chunks then freeze for 30 minutes or until semi-firm.

Fit processor with the Chopping Blade.

Add 1/3 of the lamb chunks, 2 garlic cloves, and 4 olives to the work bowl
then secure lid.

Pulse 7-10 times or until coarsely ground.

Transfer lamb mixture to a mixing bowl then repeat in 2 batches with
remaining lamb, garlic and olives.

Gently pat lamb mixture into 4 equal patties then season with salt and
pepper.

Preheat the oil in a large skillet over medium-high heat.

Add the patties to the skillet and cook for 2 minutes on each side or until
desired doneness.

Remove patties, place on buns and serve with condiments of your choice.
