TIPS

.

When using your pasta machine, always place it on a clean, stable surface, with the

power switch close to you for easy access.

.

Use a pasta drying rack to suspend the pasta for drying.  If you are going to cook your

pasta right away, dry it on a pastry or cutting board.

.

When drying the pasta, separate the strands as much as possible so they do not stick

together during cooking.

.

Once the pasta is dry, wrap it tightly in plastic wrap and store in a plastic bag.  The

pasta can be refridgerated for up to 24 hours.

.

When cooking homemade pasta, be sure to use plenty of water to prevent the pasta

strands from sticking together. You can also add a small amount of oil to the water which

prevents the strands from clinging to one another.

.

Fresh pasta typically cooks more quickly than packaged pasta. Your freshly made

spaghetti will be done after boiling for 5-8 minutes.  Fresh fettuccini will cook in 7-11

minutes, depending on desired doneness.
