Ingredients
1 Carrot
1 Cucumber
1 Red onion
1 chilli
Spiralized broccoli stems
2-3 Spring onions (white bits)
1 Radish, thinly sliced
1 Garlic clove, crushed
1 tbsp. toasted sesame seeds
½ tsp. sesame oil
1 tbsp. fish sauce
1 tsp. sugar
1 tbsp. premium light soy sauce
juice of one lime
100g black beluga lentils
Method
1.
Bring a pan of salted water to the boil on medium heat. Add
the lentils and turn the heat down to a simmer. Cook the lentils
for 25-30 minutes.
2.
Spiralize the carrot and cucumber using the large spiral blade.
3.
Spiralize the onion using the shredded spiral blade.
4.
De-seed and slice the chillies, and add all the vegetables
together in a bowl.
5.
Add all the ingredients to the bowl and stir well.
6.
Cover, and refrigerate for a few hours to allow to pickle.
