1 whole chicken, cut into pieces
1 tablespoon flour
1 teaspoon salt
½
teaspoon freshly ground pepper
2 bacon strips, diced
2 tablespoons butter
8 boiler onion, peeled
1 pound whole mushrooms
2 sprigs thyme
2 cups dry red wine
1 cup chicken stock
1 teaspoon sugar
Rub chicken with flour, salt and pepper.
In a skillet on medium heat, cook bacon until crisp. Add butter to skillet, let melt.
Add chicken to skillet and cook until golden brown.
Transfer skillet contents and remaining ingredients to pressure cooker; secure
lid.
Select MEAT/POULTRY, increase time to 40 minutes; press START. When
cooking is complete, transfer chicken, mushrooms and onions to a platter.
With lid off, set pressure cooker to BROWN/SAUTÉ, and reduce liquid for 10
minutes.
Ladle sauce over chicken and serve.
