Sanitizing
1. Prepare an approved 100 ppm sanitizing solution
(examples: 2-1/2 gal. [9.5 L] of Kay-5
®
or 2 gal.
[7.6 L] of Stera-Sheen
®
). Use warm water and follow
the manufacturer's specifications.
2. Pour the sanitizing solution into the hopper and allow
it to flow into the freezing cylinder.

3. While the solution is flowing into the freezing cylinder,
brush-clean the mix hopper, air/mix feed tube
(optional), and mix inlet hole.
4. Place the power switch in the WASH position. This
will agitate the sanitizing solution in the freezing
cylinder. Allow the solution to agitate for 5 minutes.

5. Place an empty pail beneath the door spout and
move the draw handle to the right. Draw off all the
sanitizing solution. When the sanitizer stops flowing
from the door spout, move the draw handle to the left
and place the power switch in the OFF position.

Important!
The machine must
not
be placed in AUTO
until all sanitizing solution has been removed from the
freezing cylinder and proper priming procedures have
been completed. Failure to follow this instruction may
result in damage to the freezing cylinder.
6. With sanitized hands or a plastic, sanitized glove,
stand the air/mix feed tube (optional) in the corner of
the hopper.
