cooking your pasta

Use a large pan. Fill it ¾ full with water. Add 1-2 tsp salt. Bring the water a rolling boil. Gradually
add the pasta. Cook for 5-8 minutes, stirring occasionally. Drain in a colander, rinse with fresh
water, and serve.

To avoid sticking, and to make the job easier, we recommend cooking tagliatelle and lasagna in

two batches.
