Polishing Instructions
NOTE
Shortening must be filtered and filter media must be replaced before performing polishing procedure.
a.
Remove filter pan assembly from fryer and clean according KFC Standards Library instructions.
b.
Replace filter media and add filter aid to crakling basket tray.
c.
Put oil flow selector valve into polish position by pulling red selector valve handle out.
d.
Open drain valve by pulling blue drain valve handle down.
e.
Push power switch to the PUMP position and start polish timer.
f.
When timer ends, polish procedure is complete, refer to KFC Standards Library for next procedure.
WARNING
The power supply must be disconnected before servicing or cleaning the
appliance.
