Ingredients   

4   cups   sweet   potatoes,   diced   
4   cups   white   new   potatoes,   diced   
1/2   cup   olive   oil   
salt   
pepper

   

PreparaEon   

1.

   

Heat   skillet   to   300°F   degrees,   add   oil.   

2. Add   potatoes   and   season   potatoes   with   salt   and   pepper.   

Cover   and   roast   for   25-­‐30   minutes,   unAl   tender.
