3-pound London broil
½ teaspoon kosher sea salt
½ teaspoon freshly ground black pepper
1/3 cup balsamic vinegar
1 tablespoon brown sugar, packed
1 clove garlic, smashed and peeled
1 bay leaf
*Preheat pressure oven on broil, set temperature to 450 degrees and
Bmer for 20 minutes.
Line baking sheet with foil.
Season meat with the salt and pepper. In a large skillet, over low heat,
combine vinegar, brown sugar, garlic and bay leaf.
Simmer unBl liquid has reduced by half and is a syrupy consistency,
about 5 minutes. Discard garlic and bay leaf.
Put meat on baking sheet and slather it with glaze. Place baking sheet
on top shelf of pressure oven.
Close oven door and lock handle. Cook for 5 minutes at 450 degrees,
exhaust handle and flip steak.
Lock handle and cook for an addiBonal 5 minutes for medium rare, or
cook unBl steak reaches a desired level of doneness.
Remove baking sheet from pressure oven and place meat on a cuVng
board and let rest for 5 minutes.
Slice meat against the grain and transfer to a serving pla\er.
