Smoking at mid temperature (150 - 185 °C)
First use position 3 to set the Smoking Oven to the desired temperature. Maintain this temperature by turning the power to
position 2. Watch the thermometer for temperature development and either decrease or increase the power as necessary.
Hot smoking (190 - 230 °C)
When hot smoking, it is hardly necessary to adjust the power – you can keep position 3 during the entire smoking process.
Watch the clock to see when the food is done. There are hot smoking timing instructions at the end of this booklet.
Smoking in winter
The Smoking Oven can be used in winter, but smoking times may be a little longer. We recommend position 3 for smoking in
winter. Select a sheltered smoking place where the Smoking Oven will not be cooled too much by the weather.
Selecting smoking chips
Smoke will come out more quickly if the chips are fine. With coarse chips, it will take a little longer for smoke to develop. Coarse
chips smoulder for a longer time which also means that coarse chips smoke longer and do not catch fire easily. It is advisable to
moisten the smoking chips carefully before smoking – the smoky flavour will be softer and the food will not be too bitter. The
smoking chips can be soaked in water for a few minutes or sprinkled with water while on the chip tray. With different smoking
chips, you can add different smoky flavours to the food. The most traditional smoking chips are alder chips, but other woods,
such as apple, cherry, beech and oak, also make excellent smoking chips.
After smoking
After smoking, put out all smouldering smoking chips before throwing them away. Make sure that no smouldering chips are
left in the Smoking Oven. When smoking, the grating and the fat plate become extremely hot. Use oven gloves and / or the fat
plate handle to take the grating and the fat plate out of the hot Smoking Oven. NOTE! Do not use the fat plate handle to lift
the fat plate. Wash the fat plate and the grating as soon as possible after use and they will be as good as new for a long time.
Store the Smoking Oven with the legs down. To clean the Smoking Oven, you can remove the resistor by loosening the resistor
nut. Do not immerse the resistor and the regulator in water. Clean the Smoking Oven with a damp sponge and detergent (e.g.
Muurikka MultiCleaner). The grating and the fat plate and chip tray can also be cleaned with a grill brush or in the dishwasher.
After cleaning, put the resistor with the carrier frame back in place and fasten the nut. Dry the Smoking Oven by heating it with
the resistor for a while. It is particularly important to clean and dry the Smoking Oven before winter storage, as salty moisture
may cause corrosion in the resistor and the Smoking Oven frame.
HOT SMOKING TIMES (190 - 230 °C)
The times are approximate. You will find the best time by trying. Watch the smoking process – the temperature may rise very
fast.
MUURIKKA SMOKING CHIPS
Muurikka has smoking chips of different woods. The most traditional smoking chips are made of alder. By using other woods,
you can add different flavours to your foods.
NOTE!
1.
Please make sure that the smoking chips are moist – too dry chips or an excessive amount of chips may cause the lid to open
during smoking! If the chips should catch fire in the Smoking Oven, close the lid.

During smoking, the Smoking Oven becomes extremely hot. When it is hot, always use the handle to lift it. Make sure that
children do not play with or get burnt on the Smoking Oven.
3.
Never let the cord touch the Smoking Oven when it is hot.
4.
Check the condition of the cord (and extension cord) regularly. If the resistor cord is damaged, do not use the Smoking Oven.
If the resistor cord or the resistor or the power regulator is damaged (the fuse or fault current protection is damaged or the re-
sistor does not get warm / the indicator light does not go on), the damaged part must be replaced. For security reasons, service
work must be carried out by an authorized electrician or an electrical installation business. After service work, make sure that
the resistor has been fastened correctly. Use spare parts for Muurikka Smoking Ovens only.
5.
The Smoking Oven is not designed to be used with a timer or a remote control.
6.
After use, the Smoking Oven should always be turned off (0-position) and the cord should be taken out of the socket.
7.
When moisture from the smoking process is condensed into liquid, it may drip down from the end of the Smoking Oven. It
is advisable to use the Smoking Oven on a base where this will not cause damage or inconvenience.
8.
Watch out for hot fat or water left inside the food to be smoked or on the fat plate which may burn the grating or the fat
plate when these are removed. Remove dripping marinade or cooking oil from the meat before smoking so it will not be lit by
the hot resistor.
9.
The Smoking Oven is not designed to be used over a fire or with coals.
10.
The product is guaranteed for 2 years. The guarantee does not apply to damage caused by carelessness or non-compliance
with the instructions.
