It is recommended that any servicing or maintenance work must be carried out by
a trained technician or electrician.

CAPACITY
The mixer capacity depends on the moisture content of the dough. When mixing
dough (pizza, berad, or bagels) check AR%
AR = absorption ratio (%AR) liquid in % of solids
Example: A basic recipe contains 1 kg of solids and 0,4 kg of liquid:
This gives AR = 0,4 kg x 100 = 40%

If for instance it is required to use the maximum capacity of themixer, the calculated AR=50% us
used for determing the anmount of solids and liquids in the dough:
If a SP30 is in use, and the dough with ar 50% is to be kneeded, according to the table below the
maximum capacity is 7,3 kg. The weight of the solids in this dough is calculated:
Weight of solids =Max.capacity x 100 = 7,3 kg x 100 = 5,21
AR + 100 40 + 100
Nesteen paino = 7,3 kg - 5,21 kg = 2,09 kg
