INSTALLATION

Place the machine on a flat and horizontal surface and connect the coldwater inlet pipe
to  

A

 (maximum pressure = 10 bars)

FIt the water drain pipe at 

C

 and put the other end in an outflow lower than the equipment

so that the water is able to flow out by gravity.

Place the tank in position and lock it with the strips.

Connect the electrical power supply. The machine must be connected on a 230V / 16A
power outlet provided with a ground point protected with a high sensibility differential
circuit breaker.

Open the water inlet. 

The water inlet must never be turned off while the tempering

machine is in use.

The equipment includes a water evaporation compensation system and if the water
inlet is closed, the tempering machine will switch to the safety mode and no longer
heat.

USE

VERY IMPORTANT

 : the temperature you set on the display is the temperature of the

water inside the tempering machine and not the temperature of the chocolate. Therefore,
it is very important to check the temperature of the chocolate using a thermometer. You
can purchase a specific thermometer which can be plugged on  

 connector and then

you can control the temperature of the chocolate with a good accuracy. To obtain suitable
consistency of the temperature within the mass of chocolate, it will be necessary to mix
it periodically using a spatula or to purchase a MATFER chocolate distributor which
will mix the chocolate.

temperatures are saved when OFF.

 you can switch between the different steps of chocolate work (melting,

cooling, tempering).  ,   or   leds gives the selected step.

Tempé / température -

Those keys are used to set the temperature of the water inside the tank for a given
mode. A long hit on the key allows the setting mode. The setting step is 0,5°C. If you
don’t press the key, the display gives you the temperature of the water inside the tank.
If the additionnal thermometer is connected on

, the display gives the temperature of

the chocolate. A short hit on   or   allow you to display the setting temperature.
