Fill the frypot to the level indicators with hot water.

Add 8 to 10 ounces of fryer cleaner (Henny Penny part
number 12101) to the water and mix thoroughly.
Always wear chemical splash goggles or face shield and
protective rubber gloves when cleaning the frypot as the
cleaning solution is highly alkalie. Avoid splashing or
other contact of the solution with your eyes or skin.
Severe burns and possible blindness will result. Care-
fully read the instructions on the cleaner. If solution
comes in contact with your eyes, rinse thoroughly with
cool water and see a physician immediately.

Turn the COOK/PUMP switch to COOK and enter the
Clean-Out Mode by pressing and holding until “CLEAN
OUT?”, “1=YES 2=NO” shows in display. Press to
start Clean-Out Mode. The fryer displays “*CLEAN-OUT
MODE*” and heats up to a preprogrammed temperature
(195°F (91°C max.) then automatically begins a preset timed
countdown. Use
, if necessary, to adjust the
temperature and to keep cleaning solution from boiling over.

Using the fryer brush (Henny Penny part number 12105)
scrub the inside of the frypot, the lid frame, and around
the counter-top of the fryer.
Watch the cleaning solution constantly to make sure it
does not boil over causing damage to controls.
Do not use steel wool, other abrasive cleaners or clean
ers/ sanitizers containing chlorine, bromine, iodine or
ammonia chemicals, as these will deteriorate the stainless
steel material and shorten the life of the unit.
Do not use a water jet (pressure sprayer) to clean
the unit, or component failure could result.
