3. OPERATION – BEFORE USE

LIGHTING THE OVEN
When you are ready to use the Pizzeria oven for cooking, please follow the instructions set out
below:
- Always wear a BBQ mitt or protective fireproof gloves when lighting and operating your oven.
- Make sure that you have removed any packaging that maybe left over in both the oven and
firebox chamber.
- Obtain some small dry wood, no longer than 30cm in length.
- Open the door of the fire box and build the fire on the fire bricks.
- Use some newspaper, firelighters or both to aid with the lighting of the fire.
- Close the firebox door, but leave the sliding baffle fully open to allow oxygen into the fire.
- Open the firebox door occasionally to add some wood or to stoke the fire when required.
- Be careful when you open the firebox door. The firebox has an open flame, be careful of
loose clothing and hair that could catch fire during operation of the oven.
- The inside of the oven and firebox will be lightly coated with vegetable oil to protect
against rusting during transportation. When you first light the oven you will need it at
approximately 180°C /350°F) for around 60 – 90 minutes to cure the inside of the oven.
This will burn off any of the oil and also any residue that maybe left over from the
manufacturing process.
