Easy Bread & Butter Pickles
2 cucumbers, sliced ¼" thick
1 cup sugar
1 lg. onion, thinly sliced
1 tsp. mustard seed
2 tsp. salt
½ tsp. celery seed
1 cup white vinegar
1/2 tsp. ground tumeric
1. Mix all ingredients in a medium microwave-safe bowl. Cook on 100%
for 4 minutes.
2. Stir and cook for 2 minutes. Repeat as needed until onions are
translucent (3–4 more times). Refrigerate until pickles are chilled.
Makes 4 cups of pickles and juice
Sweetheart Stuffed Peppers
1 red bell pepper
½ tsp. garlic powder
2 Tbsp. water
salt & pepper, to taste
8 oz. ground turkey
½ cup mozzarella cheese, grated
2 Tbsp. onion, minced
½ cup marinara sauce
1 tsp. Italian seasoning
1. To avoid cross contamination, wash hands and utensils after touching raw
meat.
2. Cut the pepper in half
lengthwise.
Remove the stem and seeds.
3. Put 1 half pepper in a microwave-safe dish with 1 Tbsp. water. Cook on
100% for 2 minutes. Repeat with other pepper half.
4. Mix the turkey with the onion, Italian seasoning, garlic powder and salt &
pepper. Divide into 2 and press into the pepper halves.
5. Cover with a paper towel and cook each half 4 minutes at 100%.
6. Add ¼ cup of cheese to each half and let rest for 2 minutes. Top with
warm marinara sauce and serve.
