Adjust the ROTATING PLATE SPEED
4-3 Tempering Process
The chocolate temperature change along with the water tempering process. For
example, the ideal temperature are 50
℃
, 27
℃
, and 32
℃.
1.
Input the water until it reaches the upper limit of the water level gauge. (Input
the warm water would accelerate the process.)
2.
Set up the water temperature at 50-70
℃
and wait for the chocolate
temperature to rise. (There is a temperature difference between water and
chocolate, so you can set a higher temperature for the water.)
3.
When all the chocolate is reach 50
℃
, turn on the water outlet to discharge the
warm water.
4.
Input cold water and set up the water temperature at 27
℃
.
5.
When all the chocolate is reach 27
℃
, set up the water temperature at 32
℃
.
6.
When all the chocolate is reach 32
℃
, the process of tempering is done.
4-4 Switch On the Rotating Plate to Moulding
Swith on the ROTATING PLATE and adjust the ROTATING PLATE SPEED according to
the necessity of the situation.
