Soy flour
Gluten-free flour.
Milled from roasted soybeans and
high in quality protein, soy flour
has a characteristic nutty flavor. It is
recommended to combine soy flour with
other flours.
Sugar
Increases taste and
bread color. Sugar
also stimulates
yeast growth.
Use white sugar, except if stated
otherwise in your recipe.
Water
Water is an
essential ingredient
for making bread.
For the best results,
its temperature
should be between
75°F (24°C) and
90°F (32°C).
Water may be replaced with fresh milk or
water mixed with 2% milk powder, which
may enhance bread flavor and improve
crust color. Some recipes may call for
juice for the purpose of enhancing bread
flavor, e.g. apple juice, orange juice,
lemon juice and so on.
Whole-wheat
flour
Whole wheat flour
is milled from the
entire wheat berry,
including the bran
and the germ.
Using whole wheat flour produces
a bread that is brown to dark brown
in color and often smaller in size. It is
recommended to combine with bread
flour for a better yield.
