Basic crepe recipe
Ingredients:
• 250 g flour
• 4 eggs (medium size)
• 500 ml milk
• A pinch of salt
• 50 g vanilla sugar (or plain sugar)
• 1 tablespoon rum (optional)
• 30 g butter (for greasing the pan)
Method:
• Beat the eggs and sugar until thoroughly combined.
• Add the flour and salt.
• Gradually whisk in the milk. Do not overwork the batter as this will make it tough and
less light and fluffy.
• The batter should be slightly runny. Let the dough rest for at least 10 minutes and ideally
for an hour.
• Then mix again. Add a little more milk if the dough is too thick.
