Drying Fruits

Select ripe fruits.

-

Wash fruits and remove pits.

-

Fruits can be cut to your preference: sliced, halved, peeled, unpeeled.  Fruits that are sliced 

thin and peeled will dry the fastest.

Small fruits that are left whole, such as blueberries or grapes, should be dipped in boiling 

water for 30 seconds and then in an ice bath to crack the skin.  This procedure will reduce 

drying time.

To prevent food discoloration in fruits before and after the drying process, there are many 

pretreatment options to prevent this natural process.  These are our recommendations:

Ascorbic Acid (Vitamin C)

Available at drugstores.  You can crush Vitamin C tablets 

(500mg = 1 teaspoon).  Mix 4 cups of water and 2.5 tablespoons of ascorbic acid 

and soak cut fruits for 10 minutes.

Lemon/Pineapple Juice

Mix equal parts of water and juice and soak cut fruits for 

10 minutes.

- Allow fruit to cool for 30-60 minutes before storing as mentioned on page 3. 

- Drying time is all about personal taste.  Be sure to taste your fruit before 

storing to ensure that the moisture has been removed to your liking.
