2.3 - Heating

GAS MODEL

• Turn the gas supply on, operating the valve installed upstream

from the appliance.

• The gas cock’s control knob “R” has 4 different positions:

OFF
PILOT ON
MAX. FLAME POWER
MIN FLAME POWER

• Press and turn knob “R” counter clockwise from the OFF

position to the PILOT ON position.

• At the same time,press the button of the piezoelectric lighter

“S” for a few sparks: it will ignite the pilot flame.Wait about

20 seconds from when the pilot flame lights and then release

the knob; the pilot burner flame should stay alight. If it doesn’t

repeat the operation.

• You can see that the pilot burner is on through the inspection

window “T”.

• To light the main burner, turn knob “R” round from the 

PILOT ON position to the      MAX. FLAME POWER or 

MIN. FLAME POWER position.

• For indirect gas models

• When the pressure of the steam in the jacket is close to 0.45

bar (maximum value), the safety valve “L” starts venting;

reduce power according to cooking requirements by turning

knob “R”.

Turning the main burner out

• When cooking is finished, turn knob “R” round to the PILOT

ON position to turn the main burner out; the pilot burner

stays alight ready to use the appliance.

- To turn the burner pilot out as well, turn knob “R” round to

the OFF position,

- close the on-off valve upstream from the appliance.

STEAM MODEL

• Open the on-off valve installed upstream from the appliance.
• Open the steam inlet valve “R” with the control lever, moving

it into the “OPEN” position (see user instruction sheet).

• Steam working pressure should range between 0.3 and 0.4 bar.
• If the maximum working pressure is reached (0.45 bar) the

safety relief valve “L” starts venting steam; adjust power by

turning knob “R”.

• When cooking is finished, close the steam inlet valve by

turning knob “R” round to the “CLOSED” position.

• Close the steam on-off valve installed upstream from the

appliance.

ELECTRIC MODEL

• Turn the electricity on with the automatic switch installed

upstream from the appliance.

• Turn the energy regulating knob “R” round to position “I”

(where applicable, also turn knob “Y” of the electrical power

shutter round to position I)

• When the green “S” coloured light turns on it means the

appliance is powered.

• When the yellow “W” coloured light turns on it means the

appliance is heating.

• When the pressure of the steam in the jacket is close to 0.45

bar (maximum value), shown on the manometer “H”, the

appliance is ready to use.

• By turning the knob of regulator “R” round to the position

wanted you either reduce or increase heating power (where

applicable, by turning knob “Y” round into position “0” you

reduce the power of the appliance).

• When cooking is finished, turn the knob of the energy

regulator “R” found to position “0” and turn the automatic

switch off, installed upstream from the appliance.

3 - DRAINING THE TANK

Lift the lid
Turn tap “A” to drain the tank,

lifting the handle and turning the

movable part 90 degrees.

CAUTION!
Both the liquid and the drainage tap are

extremely hot.

4 - SAFETY DEVICES
4.1 - Jacket

The indirectly heated pans are fitted with a set of safety

devices, consisting of:

• Manometer “H” which shows the pressure of the steam

inside the jacket;

• Vacuum and venting valve “I” that bleeds the air from inside

the jacket;

• Weight-loaded relief valve “L” calibrated for a maximum

pressure of 0.45 bar: it starts venting steam when pressure

inside the jacket is close to the above value.

• Screw cap “G” for filling the jacket with water.

During the very first installation, check

effectiveness of the relief valve and then again at

least once every six months.

4.2 - Safety thermostat (standard in the

electrical versions, optional for gas)

• The appliance is fitted with a safety thermostat that trips,

stopping power to the heating elements (or burners if

applicable) if the water inside the jacket has dropped below

the minimum level.

• To restore operation after having added some decalcified

water to the jacket, you have to unscrew the protection cap

and press the red coloured button “U” on the pan’s control

panel.
