Cinnamon Waffl es
Makes 20
50g soft light brown sugar
600g plain fl our
2 tbsp baking powder
1 tsp baking soda
3 tsp ground cinnamon
1 tsp salt
780ml skimmed milk
170ml vegetable oil
4 large eggs, lightly beaten

Crumble the brown sugar to remove all lumps and place in a medium mixing bowl with the fl our, baking
powder, baking soda, cinnamon and salt. Mix well. Add the milk, oil and eggs and stir until blended and
smooth.

Leave the batter to rest for 5 minutes.

Preheat the waffl e iron to your desired setting. When the iron is ready, pourapprox. 300ml batter into
the centre of the lower grid. Spread the batter using a heatproof spatula to within 1cm of the edge of the
grid. Close the lid of the waffl e iron.

When the waffl es are done, open the lid and carefully remove the baked waffl es.
Repeat with the remaining batter.
