Basic Vinaigrette
Salad dressing is simple to prepare, and much healthier for you
than what you couldpurchase at the store. This, as the name suggests,
is a basic version. Champagne vinegar is softer in flavour than other vinegars,
but you can substitute with white or red wine vinegar if you prefer.

¼
cup (60 ml) Champagne vinegar
½
small shallot, peeled and halved
1
teaspoon (5 ml) Dijon mustard
½
teaspoon (2.5 ml) kosher salt
¼
teaspoon (1 ml) ground white pepper
¾
cup (175 ml) extra virgin olive oil
1. Put all of the ingredients, in the order listed, into the blending cup.
Secure the blade assembly.
2. Blend until smooth, about 1 minute.
3. Taste and adjust seasoning as desired. Serve immediately. Dressing can
be stored in an airtight container in the refrigerator for up to 2 weeks.
