Using a clean, sanitized scrub pad, clean between the openings on air inlet grate. Move pad
side-to-side in each opening removing an oil, salt and debris from the grate. See Fig. 26.1.

9.

Locate grate comb inside of fry station inner pan. Remove grate comb and inspect for
cleanliness. Clean the comb before continuing if necessary.
