Pea Soup
Makes 6 servings
INGREDIENTS
2 tablespoons unsalted butter
1 yellow onion, peeled and quartered
1 teaspoon kosher salt, or to taste
4 cups chicken stock
1 tablespoon granulated sugar
2 teaspoons fresh lemon juice
1-1/2 pounds frozen peas
Fresh pepper to taste
1/2 cup half & half
METHOD
1.
Combine all ingredients in the Blender Jar except the half and half;
cover with lid.
2.
Press the Soup icon then touch the START/CANCEL icon.
3.
When blender has stopped, remove the Filler Cap, add the half &
half then replace the Filler Cap.
4.
Set blender speed to 3 then touch the START/CANCEL icon to start
blending. Blend for 10 seconds to incorporate.
5.
Taste carefully and adjust seasoning if needed. Ladle into bowl and
serve.
Potage Parmentier
Makes 6 servings
INGREDIENTS
1-1/2 cups potatoes, peeled and diced
1-1/2 cups leeks, sliced and rinsed
1 quart water
1/4 cup heavy cream
1-1/2 teaspoons kosher salt
1-1/2 tablespoons chives, finely chopped
METHOD
1.
Place all ingredients, except chives, in the Blender Jar; cover with lid.
2.
Press the Soup icon then touch the START/CANCEL icon.
3.
When blender has stopped, ladle into bowls and garnish with chives.
