Paprika raclette
For 4 Persons
2 red and 3 green peppers
100 g smoked bacon
800 g raclette cheese in slices
Salt, freshly milled pepper
Wash the peppers. Remove the pips and cut into fine strips. Similarly cut the smo-
ked bacon into strips and arrange on a plate with the peppers. Firstly put some
bacon into each pan and fry, then add some strips of peppers and shortly cook with
the bacon.
Oriental Raclette
For 4 Persons
600 g Pork fillet
Salt, freshly milled pepper, a little Tabasco
Fat for frying
1 onion, 2 carotts, 1 leek
100 g Soya / Mung bean shoots, 1 small tin of Mandarin segments, 1 small tin diced
pineapple, 1 dash of white wine, 2 tbsp black/red currant jelly, 2 tbsp Curry, 3 tbsp
Sojasauce, 2 tbsp apple vinegar
Cut the pork fillet in strips, season and pre-fry in a pan. Remove and keep warm.
Clean vegetables and cut into strips. Chop the onion and with the prepared vege-
tables and the bean shoots, glaze in the remaining fat. Add the fruit, after straining
the liquid away, add the white wine and stir in the black/red currant jelly. Add the
pork, season generously with the other ingredients. Place on plates in portions with
melted raclette cheese poured over.
